はっきり前に出る味ではない。
でも、そこにあると、
料理の味が少し深くなる。
しょっぱいだけではない。
甘いだけでもない。
味の奥に、
静かにいるもの。
今日は、出汁から始まる、
夏の小さな会話。
Dashi is not a flavor
that stands clearly in front.
But when it is there,
food tastes a little deeper.
It is not just salty.
It is not simply sweet, either.
It is something quiet
deep inside the flavor.
Today’s small summer conversation
begins with dashi.

夏のお昼。そうめんのつゆを少しだけ味見して、さくらが首をかしげた。
A summer lunch. After tasting a little dipping sauce, Sakura tilted her head.

 

ねぇ、すみれ。

出汁は、
強く目立つ味ではない。
けれど、そこにあると、
料理の味がまとまり、
少しだけ深くなる。
かつおの香り。
昆布の旨み。
それらが重なって、
食べものの奥に、
静かな味を作っている。
主役ではないけれど、
主役を支えるもの。
出汁とは、
そんなおいしさの土台なのかもしれない。
Dashi is not a flavor
that stands out strongly.
But when it is there,
the taste of a dish comes together
and becomes a little deeper.
The aroma of katsuobushi.
The umami of kombu.
When they overlap,
they create a quiet flavor
deep inside the food.
It is not the main character,
but it supports the main character.
Maybe dashi is
